Avocado Hummus Melts


I made these vegetarian sandwiches the other day for a little lunch hang with a girlfriend of mine. Super easy and yummy. You won't be missing the meat :) They're packed with protein and for being vegetarian they're plenty hearty!

4 slices GF bread or Ezekiel Bread
(4-6oz.) thin slices TJ's raw milk cheddar cheese
1 med. avocado
1/8 cup hummus
sea salt/pepper/ salt free cavendars (to taste)

Just toast the bread with the cheese slices on it until melted in toaster oven. Then slice avocado in half and use 1/2 per. sandwich. (mash up on toast until spreadable). Next add a layer of hummus and sprinkle with a pinch of sea salt. pepper, and s.f. cavendars. 
(makes 2 sandwiches)

Slice in half and serve with a fresh baby greens salad and sliced fresh berries or fruit!

Yummy.... I love avocado and hummus but I'd never thought of putting them together. I might have to give this one a try. Thanks Carly.
