(note: It does have a little bite and spice to it)
Chicken Sausage with Mango Ginger Chutney and Mushroom Saute
1 pack trader joe's mango chicken sausage
1 jar trader joe's mango chutney
1 15oz white mushrooms
1/2 large onion
3-4 cloves chopped garlic
1 bag trader joe's organic baby spinach (1 handful per plate)
Heat sausage in a pan until browned (8-10min.) In a separate pan, saute 2 tablespoons. evoo, mushrooms, onions, and garlic until tender (6-10 min). Once sausage is brown, turn heat to low and pour chutney over sausage, warm for 1-2 minutes. Serve sausage, chutney(serves as dressing) and mushroom saute over a bed of baby spinach, enjoy!
