Here's a quick dinner that I've been making recently. Quick and easy Bacon, Lettuce and Tomato sandwiches (avocado and blue cheese added doesn't hurt it either :)! Nitrate free, uncured applewood bacon (Trader Joes) is a new staple in my fridge. I've been buying 2 packs at a time and cooking both packs in the oven at 400 for about 20 minutes on a large cookie sheet (turning over with tongs halfway through)! It's much less messy than the stove :) I will use about one package worth for BLT's and throw the rest in a ziplock and freeze! It thaws super quick and tastes like you just made it! I will use the rest for a mix in for salads, or an add to a soup or quiche!
