Garlic Chicken

Ok, I promise I do make other things than chicken... but this was pretty tasty :) I'm all about simple, quick, and healthy ingredients and this recipe is just that! It's great served with smashed cauliflower (steamed cauliflower pureed with butter and sea salt, yum:) or a spinach or mixed green salad. Enjoy!

Garlic Chicken

4 large bone-in/skin on chicken breasts
6 large garlic cloves chopped fine
olive oil (enough to cover skin)
2 T. sea salt
1 T. pepper

On a large baking sheet generously drizzle olive oil over chicken. Rub garlic, salt and pepper on and under chicken skin. Bake at 350 for 30-35 min. or until juices run clear.

( here's what it should look like before it goes in, lots or garlic is key!! :)

Also this chicken can be used for two meals! Use the left overs to make a bbq or chinese chicken salad. Add to quesadillas, pasta, or tacos!
